Cooling and Storage

Cherries are stone fruits, so are very sensitive to despoiling after being harvested. The way they are handled and stored during the shipping process is critical. Sweet cherries should be cooled to temperatures below 5°C no more than four hours after harvest.

During transportation this chilling process must be continued. The temperature of containers that contain cherries should be kept at between 1.1 – 2.2°C, with a relative humidity of 90-95%. Cherries also require specific ventilation conditions. Containers should have an airflow of 60-80 circulations per hour with a continuous supply of fresh air.
